Matsunosuke Bakery

Challenge

With multiple locations in Japan, Matsunosuke Bakery looked to Lawrence Group to design their first location in the United States. The bakery is famous for its Japanese chiffon pancakes and traditional New England desserts. Located in Greenwich Village, New York City, the bakery project needed to occupy an extremely compact storefront in a landmark building, and include the bakery kitchen and associated back of house spaces, as well as the serving line, customer seating and imported product retail display.

Solution

In addition to creating a brand experience that captures the spirit of the Japanese locations, the project included all new cooking and exhaust systems and a complete design concept for the interior environment. New butcher block counter tops and stainless steel accents combine the design aesthetic of the Japanese locations, with a New York urban reference.

To achieve the final design on a demanding budget in such a small space, efforts were focused on high efficiency planning and resourceful uses of economic materials and furnishings.
